Instructions
- Step 1: Beat cream cheese and sugar until smooth and fluffy
- Step 2: Add egg, vanilla extract, sour cream, and lemon juice
- Step 3: Mix until well combined and smooth
- Step 4: Place silicone cupcake liners in ramekins or oven-safe cups
- Step 5: Put one vanilla wafer in bottom of each liner as crust
- Step 6: Divide cheesecake batter evenly among cups
- Step 7: Preheat air fryer to 300°F (150°C)
- Step 8: Place ramekins in air fryer basket, don't stack
- Step 9: Cook for 18-20 minutes until edges are set but center still jiggles slightly
- Step 10: Turn off air fryer and let cheesecakes sit inside for 10 minutes
- Step 11: Remove and cool to room temperature
- Step 12: Refrigerate for at least 2 hours before serving
- Step 13: Top with berries, whipped cream, or fruit sauce
